Separate egg yolks from whites. Preserve the integrity of the whites, no yellow involved!
Beat egg yolks. Add sugar, salt, and milk.
Mix flour, baking powder, and baking soda in a separate vessel.
Start heating cast iron Aebleskiver pan
Stiffly beat the egg whites.
Add dry mix to wet mix, then gently fold in the egg whites.
Oil the aebleskiver pan cups well with veggie oil. Add batter to each cup until 2/3 full. Cook until bubbly, turn with Aebleskiver hook or fork; keep turning periodically to create spherical pastery.
Be very careful of hot oil smell. The last time we made this in 2019 Anna did not want again until late 2020 and we still haven't scheduled it in early 2021.
