Set oven to 400 degrees F.

Pour 1 tbsp oil on a baking sheet and spread the oil around. Slice the potatoes into sticks and spread them out on the prepared pan. Pour 1 tbsp oil atop and sprinkle generously with salt. Stir to ensure potatoes are evenly coated and seasoned. Roast for 20 minutes before checking with a fork and roasting up to 20 more.

Meanwhile, prep the gravy. Slice the garlic and onion finely. Heat a saucepan to medium, then melt the butter. Stir and cook the onion and garlic for 2 minutes, or until translucent. Add the flour and quickly stir with a spoon. Add a little broth if it gets too clumpy.

Let mixture cook until it turns light brown. Add the broth, soy sauce, and cayenne pepper. Bring to a boil, then turn down the heat and let it cook for about 5 minutes, stirring occasionally. Expect the gravy to need 10-15 minutes total to thicken. Taste and check the consistency and when ready, turn the heat down to the lowest setting to keep warm until the fries are ready.

Dice the mozzarella and slice the green onions.

After the fries have baked for 20 minutes, check for doneness. If you desire them very crispy, consider flipping them and cooking a few more minutes in the oven. When you're happy with the fries, grind on some black pepper.

To assemble, pile one layer of fries. Top with cheese and gravy. Repeat with a second layer before sprinkling with green onions and more pepper as desired.
