Prepare the spice mix by combining the spices in a ramekin. Keep a hold of the quarter-teaspoon for dosing the spices out in a moment.

Set out a piece of parchment paper. Dump the hamburger onto it and pat until very thin. Consider using the parchment to help make it both square and flat. Sprinkle the spice mix evenly over its surface, then use the parchment to fold the proto-patties in half, concealing the spices within. Cut into four pieces and seal the edges as needed. Alternately, and this is waht we've been doing more and more, just mix the spices into the meat then split into quarters and flatten into patties. Makes excellent sliders.

Heat a nonstick skillet to medium. Fry the patties until done.

Meanwhile, split the rolls and spread a little mayo on each side of each roll. Once the patties are done, be sure to slide them into the buns while they're still hot and leaky. Enjoy!!
